NYT Pepper Steak and Celery Stir-Fry with Lemon

Ingredients

1 lb sirloin, skirt or hanger steak (set in freezer 10 min until firm)

Salt and pepper

1 tbsp cornstarch

1 tsp sugar

1 lemon

2 tbsp vegetable oil

5 celery stalks

3 garlic cloves

3 scallions

2 tbsp soy sauce

2 tbsp butter

Yield: 4

Instructions

1.      Cut beef against the grain half a finger’s width

2.      Peel lemon (save the peel!) and cut lemon in half

3.      Wash rice 3 times and set on stove top to cook

4.      Season cut beef with salt and pepper, toss in cornstarch and sugar

5.      Heat pan on medium-high then add 1 tbsp of oil. Cook beef in a single layer (2 minutes on first side, 20 seconds on the second side)

 6.      Cook the celery, garlic, scallion WHITES, and lemon peels. Season with salt. Cook 1 minute 

7.      Mix the meat and veggie together, add soy sauce, and butter. Toss it for 30 seconds. Add lemon juice (1/2) and toss again

8.      Serve. Top with scallion greens and the remaining 1/2 of your lemon.
